Breaded eggplant is the kind of recipe that makes your mouth water!

Ingredients

  • 1 eggplant

  • 500 ml of water

  • 2 eggs

  • Flour

  • Breadcrumbs

  • Oil

  • Black pepper to taste

  • Salt to taste

Directions

  • Cut the eggplant into slices neither too thin nor too thick, place in a container with 500 ml of water and salt and leave to soak for 20 minutes.
  • Drain the water from the sauce and pass the eggplant slices in the flour. 
    Dip them in beaten eggs with black pepper and salt to taste. 
    Then pass the slices in the wheat flour.
  • Preheat some oil in a skillet or pan and fry both sides of the eggplant slices until lightly browned.
  • Transfer the breaded eggplant to a plate or plate lined with paper towels to absorb excess oil and the recipe is ready to serve.Empanada Eggplant
