Ingredients

  • 1 medium cabbage, green or purple (about 1 kg)

  • 2 medium carrots, grated

  • 1 red onion, finely sliced ​​(optional)

  • 1/2 cup mayonnaise

  • 2 tablespoons white or apple cider vinegar

  • 2 teaspoons of sugar

  • Salt and black pepper to taste

Directions

  • Start by washing the cabbage well. 
    Remove outer sheets that may be damaged or dirty. 
    Cut the cabbage in half and remove the hard core.
  • Slice the cabbage into thin strips. 
    You can do this with a sharp knife or use a food processor with a slicing attachment.
  • In a large bowl, place the sliced ​​cabbage and grated carrots. 
    If using red onion, add that too.
  • In a small bowl, combine mayonnaise, vinegar, sugar, salt and pepper. 
    Mix well until you get a homogeneous sauce.
  • Pour the sauce over the vegetables in the large bowl.
  • Use two salad spoons or a pair of tongs to mix the vegetables and dressing well, making sure all ingredients are covered with the dressing.
  • Taste the salad and adjust the seasoning, adding more salt, pepper or sugar as needed.
  • Cover bowl with plastic wrap and refrigerate for at least 1 hour before serving. 
    This allows the flavors to blend and the salad tastes better.
  • Serve chilled coleslaw as a side dish to your meals. 
    It pairs well with barbecue, sandwiches, hamburgers and other dishes.
