1/2 cup (115g) cold unsalted butter, cubed
1 cup (120g) grated sharp cheddar cheese (plus extra for topping)

1/2 cup (120ml) milk (plus extra for brushing)
1 large egg

- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, black pepper, and mustard powder (if using).
- Add the cold, cubed butter to the dry ingredients. Use your fingertips or a pastry cutter to rub the butter into the flour until the mixture resembles coarse breadcrumbs.
- Stir in the grated cheddar and Parmesan cheese until evenly distributed.
