The result of this coconut corn cake is a fluffy, moist and irresistible dough!

Ingredients

  • 3 eggs

  • 1 packet of shredded coconut

  • 1 can of green corn

  • 1 measure of corn flour/corn meal or cornmeal can

  • 1 measure of milk can

  • 1 measure of sugar can

  • 1/2 measure of oil can

  • 1 tablespoon chemical baking powder

  • 1 pinch of salt

Directions

  • Put the eggs, the drained corn, the oil, the milk, the cornstarch, the sugar, the grated coconut in a blender and beat for about 2 minutes. 
    Add the salt, baking soda and beat just to mix.
  • Transfer the dough to a greased baking dish sprinkled with grated coconut, place in a preheated oven at 180º₢ and bake the cake for approximately 50 minutes.
  • Remove the cake from the oven and wait to cool at room temperature. 
    Unmold or cut into the baking sheet and the coconut corn cake is ready to serve.
