Ingredients
3 eggs
1 packet of shredded coconut
1 can of green corn
1 measure of corn flour/corn meal or cornmeal can
1 measure of milk can
1 measure of sugar can
1/2 measure of oil can
1 tablespoon chemical baking powder
1 pinch of salt
Directions
- Put the eggs, the drained corn, the oil, the milk, the cornstarch, the sugar, the grated coconut in a blender and beat for about 2 minutes.
Add the salt, baking soda and beat just to mix. - Transfer the dough to a greased baking dish sprinkled with grated coconut, place in a preheated oven at 180º₢ and bake the cake for approximately 50 minutes.
- Remove the cake from the oven and wait to cool at room temperature.
Unmold or cut into the baking sheet and the coconut corn cake is ready to serve.
