2 cups cornmeal
1 cup of wheat flour
1 cup of sugar
1 tablespoon baking powder
2 eggs
1 cup of milk
1/2 cup oil
1 pinch of salt
Directions
- Preheat the oven to 180°C and grease a loaf pan or use baking paper.
- In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs lightly. Add the milk and oil, and mix well.
- Pour the liquid mixture into the dry ingredients and stir until everything is incorporated. The dough will be thick and sticky.
- Pour the batter into the prepared pan.
- Bake in the preheated oven for about 30-40 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
