Ingredients
4 cube steaks (about ½ inch thick)
1 ½ cups all-purpose flour
2 large eggs
½ cup milk
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon cayenne pepper (optional)
½ cup vegetable oil (for frying)
¼ cup pan drippings (or butter if needed)
¼ cup all-purpose flour
2 cups whole milk
Salt and black pepper to taste
Directions
- In a shallow bowl, mix flour, salt, pepper, garlic powder, paprika, and cayenne.
- In another bowl, whisk together eggs and milk.
- Coat each steak in seasoned flour.
- Dip into egg mixture.
- Coat again in flour, pressing firmly for a thick crust.
- Heat oil in a large skillet over medium heat.
- Fry steaks 3–4 minutes per side until golden brown and crispy.
- Remove and drain on paper towels.
- In the same skillet, leave ¼ cup drippings.
- Whisk in flour and cook 1–2 minutes until lightly golden.
- Gradually whisk in milk.
- Simmer until thickened (about 3–5 minutes).
- Season with salt and plenty of black pepper.
- Spoon warm gravy over crispy steak and serve immediately.
