Ingredients
2 cups of cassava flour (can be fine, medium or coarse, according to your preference)
1/2 cup butter or margarine
1 large onion, chopped
3 garlic cloves, minced
1/2 cup raisins
1/2 cup nuts (such as Brazil nuts or cashews), chopped
1/2 cup walnuts, chopped
1/2 cup almonds, chopped
salt to taste
Black pepper to taste
chopped parsley to taste
chopped rosemary to taste
1/2 cup chopped bacon or red pepperoni sausage (optional, for a smoky touch)
Directions
- In a large skillet, melt the butter over medium heat.
- If using bacon or pepperoni sausage, fry them until golden and crispy in melted butter.
- Add the chopped onion and garlic to the skillet and sauté until golden and fragrant.
- Add the chestnuts, walnuts, almonds and raisins to the skillet and cook for a few minutes until the chestnuts are lightly browned.
- Add the cassava flour to the skillet and stir well so that all the ingredients mix together.
- Season the farofa with salt, black pepper, parsley and rosemary to taste.
The amount of spices will depend on your personal taste. - Keep stirring the farofa for a few more minutes until everything is well incorporated and the flour is lightly browned.
- Remove the skillet from the heat and let the farofa cool down a bit before serving.
