Here is a basic recipe for a fluffy chocolate cake:

Ingredients

  • 2 cups of wheat flour

  • 1 and 1/2 cups of sugar

  • 3/4 cup cocoa powder

  • 1 and 1/2 teaspoons baking powder

  • 1 and 1/2 teaspoons of baking soda

  • 1 teaspoon of salt

  • 2 eggs

  • 1 cup of milk

  • 1/2 cup vegetable oil

  • 2 teaspoons of vanilla extract

  • 1 cup boiling water

Directions

  • Preheat the oven to 180°C and grease a round cake tin approximately 23 cm in diameter with butter or oil and sprinkle with flour.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda and salt. 
    Make sure they are well matched.
  • Add eggs, milk, vegetable oil and vanilla extract to the dry mixture. 
    Beat with a mixer on medium speed for about 2 minutes, until you get a homogeneous mass.
  • Reduce the mixer speed and add the boiling water to the dough. 
    Mix well, as the dough will be quite liquid, but this is normal.
  • Pour the batter into the prepared tin and bake in the preheated oven for approximately 30 to 35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • Remove the cake from the oven and let it cool in the pan for about 10 minutes. 
    Then transfer it to a cooling rack and let it cool completely before serving.
  • If you wish, you can decorate the cake with a frosting of your choice, such as chocolate ganache, whipped cream or brigadeiro.
