Ingredients

  • 2 cups of cornmeal

  • 1 cup wheat flour

  • 2 cups of sugar

  • 3 eggs

  • 1/2 cup vegetable oil (you can use corn oil, sunflower oil, or whatever you prefer)

  • 1 tablespoon powdered yeast

  • 1 pinch of salt

  • 2 and 1/2 cups of milk

  • 1 tablespoon fennel (optional, to add a special touch to the flavor)

Directions

  • Preheat the oven to 180°C (350°F) and grease a round cake tin with butter and flour (or use parchment paper to line the bottom).
  • In a large bowl, mix the cornmeal, wheat flour, sugar and baking powder. 
    If you wish, you can also add fennel, which will give the cake a characteristic touch.
  • In another bowl, beat the eggs with a fork or fouet. 
    Add oil and milk, mixing well.
  • Combine liquid mixture with dry ingredients in large bowl. 
    Mix until you get a homogeneous mass.
  • Pour the dough into the greased mold and place in the preheated oven.
  • Bake the cornmeal cake for approximately 35 to 40 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  • Remove the cake from the oven and let it cool in the pan for a few minutes.
  • Carefully unmold the cake and place it on a plate or rack to finish cooling completely.
