Whether for a snack or part of the meal, fried polenta is very simple to prepare and delicious!


  • 2 cups of cornmeal (240 grams)

  • 3 cloves of garlic

  • 1/2 onion

  • 300 ml of cold water

  • 700 ml of hot water

  • cornmeal for breading

  • salt to taste


  • In a container, place the cornmeal and cold water, mix well and set aside. 
    Add a drizzle of olive oil in a pan, add the chopped onion and sauté for 1 minute, stirring constantly.
  • Add the crushed garlic and sauté for another 1 minute, stirring well. 
    Add the hydrated cornmeal, hot water, salt to taste and cook stirring constantly for 5 minutes. 
    Transfer the dough to a baking sheet, spread out and allow to cool to room temperature.
  • Cover the polenta and leave it in the fridge for 2 hours. 
    Then cut it into strips of the size you prefer and coat in cornmeal. 
    Fry in preheated oil until golden.
  • Carefully remove the fried polenta strips from the oil, transfer to a plate or plate lined with paper towels and the recipe is ready to serve.
