1 whole chicken (about 4-5 lbs), cleaned and cut into pieces
10 cups water or low-sodium chicken broth
2 carrots, peeled and cut into chunks
2 celery stalks, cut into chunks
1 large onion, quartered
4 garlic cloves, smashed
2 bay leaves
1 teaspoon whole black peppercorns
1 teaspoon salt (adjust to taste)
2 tablespoons olive oil or butter

2 cups egg noodles (or any preferred pasta)
2 cups shredded cooked chicken (from the broth)

Directions
- In a large stockpot, add the chicken, water/broth, carrots, celery, onion, garlic, bay leaves, and peppercorns.
- Bring to a boil, then reduce to a simmer. Skim off any foam or impurities that rise to the top.
- Simmer for about 1 to 1.5 hours, until the chicken is fully cooked and tender.
- Remove the chicken and set it aside to cool. Strain the broth through a fine mesh sieve, discarding the solids.
- In the same stockpot, heat olive oil or butter over medium heat.
- Sauté the sliced carrots, celery, and onion until softened, about 5-7 minutes.
- Pour the strained broth back into the pot with the sautéed vegetables.
- Bring to a gentle boil, then add the noodles. Cook according to the package instructions, usually 6-8 minutes.
- While the noodles cook, shred the reserved chicken meat. Discard the bones and skin.
