150 grams of chopped bacon or 1 cup
1/2 tablespoon of olive oil or 8 grams (if the bacon does not release almost any fat)

3 egg yolks or 50 grams
1/4 teaspoon of black pepper or 0.4 grams
1/4 cup (tea) grated Parmesan cheese or 30 grams
3 tablespoons of boxed cream or 48 grams
1/4 teaspoon freshly grated nutmeg or 0.2 grams
6 tablespoons of cream cheese or 80 grams
1/8 teaspoon of salt or 0.5 gram
2 liters of water
200 grams of macaroni
1/2 cup (tea) of pasta cooking water or 110 grams or 110 ml (water to put in the pan along with the egg mixture)
Directions
- In a pan over low heat, add chopped bacon;
- fry;
- Remove half of the bacon from the pan;
- Add 1 tsp of oil to the pan;
- Add 1 teaspoon of garlic;
- Fry a little;
- In a bowl, add 1 egg;
- Add 3 yolks;
- Add 1/4 teaspoon of black pepper or 0.4 grams;
- Add 1/4 cup (tea) of grated Parmesan cheese or 30 grams;
- Add 3 tablespoons of boxed milk cream or 48 grams;
- Add 1/4 teaspoon of freshly grated nutmeg or 0.2 grams;
- Add 6 tablespoons of cream cheese or 80 grams;
- Add 1 pinch of salt;
- Mix;
- Boil the pasta for 7 minutes (until al dente, not too soft);
- Add the noodles to the bacon pan (with the heat off);
- Mix;
- Add the sauce;
- Add 1 cup of pasta cooking water;
- Mix;
- Add the bacon;
