100 grams of dry shredded coconut or 1 cup
10 tablespoons of water or 130 grams
1 and 3/4 cup (tea) of granulated sugar or 276 grams
3 and ½ tablespoons unsalted butter or 48 grams
2 tablespoons of coconut milk or 26 grams
6 free-range egg yolks or 102 grams
6 farm egg yolks or 102 grams
1 tablespoon of egg white or 14 grams
1 teaspoon vanilla essence or white vanilla essence or 4 grams
unsalted butter for sprinkling the molds
granulated sugar for sprinkling the molds
Directions
- In a bowl, add 100 grams of dry grated coconut or 1 cup;
- Add 10 tablespoons of water or 130 grams;
- Mix and reserve;
- In a bowl, add 1 and 3/4 cups (tea) of granulated sugar or 276 grams;
- Add 3 and ½ tablespoons of unsalted butter or 48 grams;
- Add 2 tablespoons of coconut milk or 26 grams;
- Add 6 free-range egg yolks or 102 grams (sifted);
- Add 6 yolks of farm eggs or 102 grams (sifted);
- Add 1 tablespoon of egg white or 14 grams;
- Add 1 teaspoon of vanilla essence or white vanilla essence or 4 grams;
- Add the hydrated coconut that was reserved;
- Mix well;
- Grease the mold with butter and sugar;
- Fill the form;
- Add hot water to the bottom of a large pan (1/3 of the height of the quindim pans);
- Add the quindim shapes;
- Bake at 180 degrees for approximately 55 minutes;
- Your quindim is ready!
