Ingredients
- For the pudding:
1 can condensed milk (395g)
2 cans of milk (use the empty condensed milk can as a measure)
3 eggs
1 teaspoon vanilla extract (optional)
- For the syrup:
1 cup of sugar
1/2 cup of water
Directions
- In a pan, put the sugar and water.
- Take to medium fire and let cook without stirring until the syrup is golden.Â
This will take about 10-15 minutes.Â
Keep an eye on the syrup so it doesn’t burn. - As soon as the syrup reaches the desired color, immediately pour it into a pudding mold, spreading it along the bottom and sides of the mold.Â
Reserve. - In the blender, add condensed milk, milk, eggs and vanilla essence (if using).
- Beat all the ingredients in the blender for about 2 minutes, until you get a homogeneous mixture.
- Pour the pudding mixture into the caramelized form, over the syrup.
- Cover the mold with aluminum foil or plastic wrap.
- Place the mold in the refrigerator and let the pudding chill for at least 4 hours, or preferably overnight, to ensure it is firm.
- When ready to serve, run a knife around the edges of the pudding to loosen.Â
Place a serving plate over the tin and turn it upside down, letting the syrup drip over the pudding. - Your refrigerator pudding is ready to be enjoyed!Â
Cut into portions and serve.
