Ingredients

  • 2 cups of cooked rice

  • 3 eggs

  • 1 cup of sugar

  • 1/2 cup vegetable oil

  • 1/2 cup of milk

  • 1 tablespoon powdered yeast

  • 1 teaspoon vanilla essence (optional)

  • Pinch of salt

Directions

  • Preheat the oven to 180°C and grease a cake tin with butter and flour.
  • In a blender, add cooked rice, eggs, sugar, vegetable oil, milk, vanilla extract (if using) and salt. 
    Beat everything until you get a smooth and homogeneous mixture.
  • Add the baking powder to the dough and mix gently with a spoon or spatula, just to incorporate.
  • Pour the batter into the prepared pan and smooth the surface.
  • Place in the preheated oven and bake for approximately 35 to 40 minutes, or until the cake is golden brown and a skewer inserted in the center comes out clean.
  • Remove the cake from the oven and let it cool before unmolding.
  • Serve the rice cake in slices and enjoy!
