Rice Cake in the Airfryer

Ingredients
300g of cleaned shrimp
2 cups of rice
4 cups of water
1 chopped onion
2 cloves of minced garlic
1 chopped bell pepper (optional)
2 chopped tomatoes
1/2 cup tomato sauce
Salt to taste
Black pepper to taste
Olive oil
Chopped parsley for garnish
Directions
- In a pan, sauté the onion and garlic in olive oil until golden.
- Add the shrimp and cook for a few minutes until they turn pink. Season with salt and pepper to taste.
- Remove the shrimp from the pan and set aside.
- In the same pan, add a little more olive oil, if necessary, and sauté the peppers and tomatoes until soft.
- Add the rice and stir well, letting it fry for a few minutes.
- Add the tomato sauce and mix well.
- Pour water into the pan, season with salt to taste and bring to a boil.
- Once the water boils, reduce the heat, cover the pan and let it cook for about 15-20 minutes, or until the rice is cooked and the water has been absorbed.
- When the rice is ready, add the reserved shrimp on top of the rice in the pan.
- Cover the pan again and let it rest for a few minutes.
- Serve the rice with shrimp sprinkled with chopped parsley on top.
