Ingredients
1/2 cup peanut butter (smooth or chunky)
1/4 cup coconut milk
2 tablespoons soy sauce
1 tablespoon brown sugar or honey
1 tablespoon lime juice (freshly squeezed)
1 teaspoon ginger, freshly grated or ground
1 clove garlic, minced
1/2 teaspoon red chili flakes (optional, for heat)
1/4 cup water (to adjust consistency)
1 tablespoon vegetable oil (for sautéing)
Directions
- Grate the ginger, mince the garlic, and squeeze the lime juice.
- In a small saucepan, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
- Add the peanut butter, coconut milk, soy sauce, brown sugar (or honey), lime juice, and chili flakes to the pan. Stir well to combine.
- Let the mixture simmer for about 5 minutes, stirring occasionally. If the sauce is too thick, add a little water to reach your desired consistency.
- Taste the sauce and adjust the seasoning by adding more soy sauce (for saltiness), lime juice (for acidity), or chili flakes (for heat).
- Once the sauce is smooth and creamy, remove it from heat. Serve warm as a dipping sauce for grilled meats, skewers, or vegetables. It can also be used as a dressing for salads or a topping for noodles.
