Ingredients

  • 2 medium zucchinis

  • 1 medium onion chopped

  • 2 cloves of garlic, chopped

  • 3 eggs

  • 1 cup of wheat flour

  • 1/2 cup of milk

  • 1/4 cup olive oil

  • 1 teaspoon of baking powder

  • Salt and pepper to taste

  • Grated cheese to taste (optional)

Directions

  • Preheat the oven to 180°C and grease a pie dish with a little olive oil or butter.
  • Wash the zucchini well and cut them into thin slices.
  • In a frying pan, heat some olive oil and sauté the onion and garlic until golden.
  • Add the zucchini slices to the pan and cook for about 5-7 minutes, until they are soft. Season with salt and pepper to taste.
  • In a large bowl, beat the eggs. Add the milk, olive oil and wheat flour. Mix well until you obtain a homogeneous dough.
  • Add the baking powder to the dough and mix gently.
  • Add the sautéed zucchini to the dough and mix well.
  • Pour the mixture into the greased pie pan and level the surface with a spatula.
  • If desired, sprinkle grated cheese over the top of the pie.
  • Place in the preheated oven and bake for approximately 30-40 minutes, or until the pie is golden and firm to the touch.
  • Remove from the oven and let cool for a few minutes before cutting into slices and serving.
