Ingredients

  • Cake
  • 1¾ cups (220g) all-purpose flour

  • 2 cups (400g) granulated sugar

  • ¾ cup (75g) unsweetened cocoa powder

  • 2 tsp baking powder

  • 1½ tsp baking soda

  • 1 tsp salt

  • 2 large eggs, room temperature

  • 1 cup (240ml) whole milk

  • ½ cup (120ml) vegetable oil

  • 2 tsp pure vanilla extract

  • 1 cup (240ml) boiling water

  • 1 tsp instant espresso powder (optional, enhances chocolate flavor)

  • For the Truffle Ganache
  • 16 oz (450g) high-quality dark chocolate (60-70% cocoa), finely chopped

  • 1 cup (240ml) heavy cream

  • Optional garnish: Cocoa powder, chocolate shavings, or fresh berries

Directions

  • Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder (if using).
  • Add eggs, milk, oil, and vanilla. Mix until smooth. Gradually stir in boiling water (batter will be thin).
  • Divide batter evenly between pans. Bake 35-40 minutes, or until a toothpick inserted comes out clean. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Place chopped chocolate in a heatproof bowl. Heat heavy cream in a saucepan until simmering (do not boil). Pour hot cream over chocolate, let sit 2 minutes, then stir until smooth. Cool slightly to thicken (15-20 minutes).
  • If needed, level cake layers with a serrated knife. Place one layer on a serving plate. Spread ½ cup ganache over it. Top with the second layer.
  • Pour remaining ganache over the cake, using a spatula to spread it evenly over the top and sides. Chill for at least 2 hours to set.
  • Garnish with cocoa powder or chocolate shavings. Slice with a warm knife for clean cuts. Serve with whipped cream or vanilla ice cream if desired.
