This lasagna soup transforms the beloved baked dish into a quick and satisfying meal. With bold garlic, Italian seasoning, crushed tomatoes, and perfectly cooked noodles simmered in a flavorful broth, it’s topped with a creamy ricotta mixture and melted mozzarella for that authentic lasagna taste in every bite.

Ingredients

  • 1 lb (450g) ground beef or Italian sausage

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 tbsp tomato paste

  • 1 (28 oz) can crushed tomatoes

  • 1 (14 oz) can diced tomatoes

  • 4 cups beef or chicken broth

  • 2 tsp Italian seasoning

  • ½ tsp dried basil

  • ½ tsp salt (adjust to taste)

  • ¼ tsp black pepper

  • 8 lasagna noodles, broken into pieces

  • 1 cup ricotta cheese

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • Fresh parsley or basil for garnish

Directions

  • In a large pot over medium heat, cook the ground beef or sausage until browned. Drain excess fat if needed.
  • Add diced onion and cook for 3–4 minutes until softened. Stir in garlic and cook for 30 seconds. Add tomato paste and cook for 1 minute.
  • Stir in crushed tomatoes, diced tomatoes, broth, Italian seasoning, basil, salt, and pepper. Bring to a boil.
  • Add broken lasagna noodles. Reduce heat and simmer for 15–20 minutes, until noodles are tender.
  • In a small bowl, mix ricotta, mozzarella, and Parmesan.
  • Ladle soup into bowls. Add a generous spoonful of the cheese mixture on top. Garnish with fresh parsley or basil and serve hot.
