Ingredients
1 lb (450g) ground beef or Italian sausage
1 small onion, diced
3 cloves garlic, minced
1 tbsp tomato paste
1 (28 oz) can crushed tomatoes
1 (14 oz) can diced tomatoes
4 cups beef or chicken broth
2 tsp Italian seasoning
½ tsp dried basil
½ tsp salt (adjust to taste)
¼ tsp black pepper
8 lasagna noodles, broken into pieces
1 cup ricotta cheese
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
Fresh parsley or basil for garnish
Directions
- In a large pot over medium heat, cook the ground beef or sausage until browned. Drain excess fat if needed.
- Add diced onion and cook for 3–4 minutes until softened. Stir in garlic and cook for 30 seconds. Add tomato paste and cook for 1 minute.
- Stir in crushed tomatoes, diced tomatoes, broth, Italian seasoning, basil, salt, and pepper. Bring to a boil.
- Add broken lasagna noodles. Reduce heat and simmer for 15–20 minutes, until noodles are tender.
- In a small bowl, mix ricotta, mozzarella, and Parmesan.
- Ladle soup into bowls. Add a generous spoonful of the cheese mixture on top. Garnish with fresh parsley or basil and serve hot.
