These classic molasses cookies are a nostalgic favorite, perfect for cozy afternoons or festive gatherings. Their tender texture and bold, spiced flavor make them irresistible straight from the oven or paired with a cup of coffee or milk.

Ingredients

  • 2 1/4 cups all-purpose flour

  • 2 teaspoons baking soda

  • 1/2 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground ginger

  • 1/2 teaspoon ground cloves

  • 3/4 cup unsalted butter, softened

  • 1 cup granulated sugar (plus extra for rolling)

  • 1/4 cup molasses

  • 1 large egg

  • 1 teaspoon vanilla extract

Directions

  • Preheat your oven to 180°C (350°F) and line baking sheets with parchment paper.
  • In a bowl, whisk together flour, baking soda, salt, cinnamon, ginger, and cloves.
  • In a separate large bowl, cream the butter and sugar until light and fluffy.
  • Beat in the egg, then mix in the molasses and vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, mixing until combined.
  • Scoop tablespoon-sized portions of dough and roll into balls.
  • Roll each ball in granulated sugar and place on the baking sheet, spacing them apart.
  • Bake for 10–12 minutes until the edges are set but centers remain soft.
  • Let cool on the pan for a few minutes before transferring to a wire rack.
