Ingredients

  • 250g high-quality fresh beef tenderloin

  • 1 egg yolk

  • 1 tbsp capers, finely chopped

  • 1 small shallot, finely minced

  • 1 tsp Dijon mustard

  • 1 tsp Worcestershire sauce

  • 1 tbsp olive oil

  • Salt and freshly ground black pepper (to taste)

  • Fresh parsley, chopped (optional)

  • Toasted bread or fries (for serving)

Directions

  • Using a sharp knife, finely chop the beef into small pieces (do not grind for best texture).
  • Place the beef in a chilled bowl.
  • Add shallots, capers, mustard, Worcestershire sauce, and olive oil.
  • Season with salt and pepper, mixing gently to combine.
  • Plate the mixture using a ring mold for a neat presentation.
  • Carefully place the egg yolk on top.
