Ingredients
2 eggs
2 tablespoons of corn starch
250 grams of breadcrumbs
500 ml of ice water
1 medium or large eggplant
1 tablespoon of paprika
1 tablespoon of lemon pepper
1 tablespoon of salt
1/2 liter of oil for frying
Directions
- Peel the eggplant, cut into strips in one direction, turn the eggplant and cut into strips in the other direction, forming strips stuck together by the stem.Â
Put it in a bowl with ice water and salt and let it soak for half an hour. - Place the eggs and cornstarch in a bowl, beat well and set aside.Â
Add the breadcrumbs, paprika, lemon pepper, salt to taste and mix in a separate bowl.Â
Coat the eggplant completely in the egg mixture, then coat in the seasoned breadcrumbs. - Preheat the oil in a skillet and add the eggplant.Â
Open the eggplant strips with a fork or handle to fry well inside.Â
