Make all your guests crazy to try this fried eggplant!


  • 2 eggs

  • 2 tablespoons of corn starch

  • 250 grams of breadcrumbs

  • 500 ml of ice water

  • 1 medium or large eggplant

  • 1 tablespoon of paprika

  • 1 tablespoon of lemon pepper

  • 1 tablespoon of salt

  • 1/2 liter of oil for frying


  • Peel the eggplant, cut into strips in one direction, turn the eggplant and cut into strips in the other direction, forming strips stuck together by the stem. 
    Put it in a bowl with ice water and salt and let it soak for half an hour.
  • Place the eggs and cornstarch in a bowl, beat well and set aside. 
    Add the breadcrumbs, paprika, lemon pepper, salt to taste and mix in a separate bowl. 
    Coat the eggplant completely in the egg mixture, then coat in the seasoned breadcrumbs.
  • Preheat the oil in a skillet and add the eggplant. 
    Open the eggplant strips with a fork or handle to fry well inside. 
    Fry the eggplant until it is crispy and lightly golden.
  • Carefully remove the fried eggplant from the oil, place it on a plate or plate lined with paper towels and the recipe is ready to be enjoyed.
