Ingredients
1 ripe banana
½ cup wheat flour
1 egg
½ cup milk (or plant-based milk if you prefer)
1 teaspoon powdered yeast
1 teaspoon of sugar (optional)
Pinch of salt
Oil or butter for greasing the skillet
Directions
- In a bowl, mash the banana well with a fork until you get a puree.
- Add the egg and mix well until smooth.
- Add the flour, milk, baking powder, sugar (if using) and salt.Â
Mix until you form a smooth dough.Â
If you prefer a more liquid consistency, add a little more milk. - Preheat a nonstick skillet over medium heat.Â
Grease it with a little oil or butter. - Pour about ¼ cup of the batter into the skillet to form each pancake.Â
Spread a little with the back of the spoon to get the desired shape. - Cook for about 2-3 minutes, until the underside is browned and the surface is full of bubbles.
- Carefully flip the pancake and cook for another 1-2 minutes, until the other side is golden brown.
- Repeat the process until all the batter is used, adding more oil or butter to the skillet as needed.
- Serve the banana pancakes hot and enjoy!Â
