This chayote stew is very easy to make and goes deliciously with many dishes!

Ingredients

  • 1 chayote peeled and chopped

  • 2 tablespoons of oil

  • 2 minced garlic cloves

  • 4 tablespoons of water

  • 1/2 chopped onion

  • Chimichurri to taste

  • Green smell to taste

  • Saffron to taste

  • Salt to taste

Directions

  • Peel the chayote, remove the core if you prefer, cut the vegetable into cubes and set aside.
  • In a pan over medium heat, add oil, chopped onion, chopped garlic and saute.
  • Add the chopped chayote and mix very well. 
    Season with saffron, salt and chimichurri.
  • Reduce the heat and continue to cook for a few minutes, always mixing the ingredients well.
  • Add the water and mix everything. 
    Cover the pan and cook over low heat for 3 minutes.
  • After the water dries, finish with chopped green smell and the braised chayote is ready.
