Ingredients
800g to 1kg of fish fillet (it can be sea bass, dogfish, whiting, boyfriend, among others)
1 large onion, cut into rings
2 medium tomatoes, cut into rounds
1 bell pepper (red or yellow), sliced
3 garlic cloves, minced
1 bunch of coriander, chopped
1 bunch of chives, chopped
Juice of 2 lemons
200 ml of coconut milk
200ml fish broth (or water)
Palm oil to taste
Olive oil
Salt and pepper to taste
Directions
- Start by seasoning the fish fillets with lemon juice, salt and pepper.Â
Let it marinate for at least 15-20 minutes. - In a large pan, add a little olive oil and sauté the onion, garlic, bell pepper and half of the chopped cilantro until soft.
- Add the tomatoes and sauté for a few more minutes, until they start to soften.
- Then place the fish fillets over the vegetable stew, without overlapping too much.Â
Sprinkle the rest of the cilantro and chives over the top. - Whisk together the coconut milk and fish broth (or water) and pour over the fillets in the pan.Â
The amount of liquid can vary depending on the size of the pan, but the fish should be almost covered. - Cover the pan and cook over medium-low heat for about 20-30 minutes, or until the fish fillets are cooked through and fall apart easily.Â
During cooking, avoid stirring too much so as not to break the fillets. - When the fish is cooked, add palm oil to taste to give color and flavor to the moqueca.Â
Stir gently to incorporate. - Taste and adjust salt and pepper if necessary.
- Serve the fish moqueca with white rice and farofa, accompanied by pieces of bread to dip in the delicious broth.
