3 large eggs
3 small raw carrots
4 tablespoons of coconut milk
1/2 cup (tea) coconut oil
1/2 cup (tea) almond flour
1/2 cup (tea) demerara sugar
1 cup (tea) of oat flour
1 full tablespoon of baking powder
- Ganache Topping
200 ml of sour cream
200 grams semisweet chocolate
Directions
- Add the sliced ​​carrots, oil, sugar, coconut milk and eggs to the blender.Â
Beat for 5 minutes, or until the dough is smooth.Â
Add the oat flour, almond flour, baking powder and beat for another 30 seconds. - Put the dough in a greased shape with coconut oil and almond flour.Â
Place in a preheated oven at 200º₢ to bake for approximately 35 minutes. - To make the ganache frosting, melt the semisweet chocolate every 30 seconds in the microwave, or in a bain-marie.Â
Mix with the cream of milk until homogenized. - Unmold the cake onto a plate or platter after cooling to room temperature.Â
Pour the ganache frosting on top and spread evenly.Â
