Ingredients

  • 1 cup corn for hominy

  • 1 liter of whole milk

  • 1 cup coconut milk

  • 1 cup of sugar

  • 4 cloves from India

  • 1 cinnamon stick

  • 1 pinch of salt

  • Cinnamon powder for sprinkling

Directions

  • Wash the hominy and soak it in cold water for at least 6 hours.
  • Place the hominy in a pressure cooker, cover with water and cook for about 40 minutes or until the hominy is soft.
  • In another pan, add the milk, sugar, coconut milk, cinnamon sticks, cloves and a pinch of salt.
  • Bring the mixture to a boil over medium heat, stirring constantly, until it begins to boil.
  • When the hominy is cooked, drain the water and add it to the milk mixture.
  • Cook for a few more minutes, stirring constantly, until the hominy is very creamy and cooked through.
  • Remove the cinnamon stick and cloves and serve hot or cold, sprinkled with powdered cinnamon.
