Ingredients

  • 2 large eggplants cut into thin slices

  • 2 tablespoons of olive oil

  • 1 large chopped onion

  • 2 minced garlic cloves

  • 500g minced meat

  • 1 tablespoon tomato paste

  • 1/2 cup dry white wine

  • 1 teaspoon cinnamon powder

  • 1/2 teaspoon grated nutmeg

  • Salt and pepper to taste

  • 3 medium potatoes cut into thin slices

  • 3 tablespoons of butter

  • 3 tablespoons wheat flour

  • 2 cups of milk

  • 2 eggs

  • 1 cup grated parmesan cheese

Directions

  • Preheat the oven to 200°C.
  • In a skillet, heat the oil over medium heat and sauté the onion and garlic until soft.
  • Add ground beef and cook until browned. 
    Add the tomato paste, white wine, cinnamon, nutmeg, salt and pepper and cook for another 10 minutes.
  • In another pan, cook the eggplant slices in salted water until soft. 
    Run and book.
  • In another pan, cook the potato slices in salted water until soft. 
    Run and book.
  • In a pan, melt the butter over medium heat. 
    Add the flour and cook, stirring constantly, for 2 minutes. 
    Gradually add milk, stirring constantly, until thickened. 
    Add the eggs and 1/2 cup Parmesan cheese and mix well.
  • In a refractory, place a layer of potatoes at the bottom, followed by a layer of ground meat and then a layer of eggplants. 
    Repeat the layers, ending with a layer of eggplants.
  • Pour the egg and cheese mixture over the top and sprinkle with the remaining Parmesan cheese.
  • Bake for 40-45 minutes, or until golden and crispy.
  • Remove from oven and let cool for a few minutes before serving.
