Ingredients

  • 1 ripe banana

  • ½ cup wheat flour

  • 1 egg

  • ½ cup milk (or plant-based milk if you prefer)

  • 1 teaspoon powdered yeast

  • 1 teaspoon of sugar (optional)

  • Pinch of salt

  • Oil or butter for greasing the skillet

Directions

  • In a bowl, mash the banana well with a fork until you get a puree.
  • Add the egg and mix well until smooth.
  • Add the flour, milk, baking powder, sugar (if using) and salt. 
    Mix until you form a smooth dough. 
    If you prefer a more liquid consistency, add a little more milk.
  • Preheat a nonstick skillet over medium heat. 
    Grease it with a little oil or butter.
  • Pour about ¼ cup of the batter into the skillet to form each pancake. 
    Spread a little with the back of the spoon to get the desired shape.
  • Cook for about 2-3 minutes, until the underside is browned and the surface is full of bubbles.
  • Carefully flip the pancake and cook for another 1-2 minutes, until the other side is golden brown.
  • Repeat the process until all the batter is used, adding more oil or butter to the skillet as needed.
  • Serve the banana pancakes hot and enjoy! 
    You can accompany them with honey, maple syrup, fresh fruit, yogurt or other ingredients of your choice.
