To make this Shrimp Bobó, use the ingredients below and follow the instructions for preparation.

Ingredients

  • 500g peeled and cleaned shrimp

  • 2 tablespoons of palm oil

  • 2 tablespoons of olive oil

  • 1 chopped onion

  • 2 minced garlic cloves

  • 1 chopped red pepper

  • 1 chopped yellow pepper

  • 2 chopped tomatoes

  • 1 small glass of coconut milk (200ml)

  • 200ml shrimp broth (can be replaced with vegetable broth)

  • 2 tablespoons of tomato puree

  • 1 tablespoon chopped coriander

  • 1 lemon juice

  • Salt and pepper to taste

  • 500g of cooked and mashed cassava/cassava

  • Chopped parsley to decorate

Directions

  • In a large pan, heat the palm oil and olive oil.
  • Add chopped onion and garlic and sauté until soft and lightly browned.
  • Add the peppers and saute for a few more minutes, until they are slightly soft.
  • Add the chopped tomatoes and sauté until they start to break down.
  • Place the shrimp in the pan and cook for about 5 minutes, until they are pink and cooked through. 
    Season with salt, pepper and lemon juice.
  • Then add the shrimp broth, coconut milk, tomato paste and chopped cilantro. 
    Mix well.
  • Bring the mixture to a boil and reduce the heat. 
    Cook for about 10 minutes, stirring occasionally to enhance the flavors.
  • Add the cooked and mashed cassava/cassava to the pan. 
    Stir well to incorporate the ingredients.
  • Cook for a few more minutes, until the bobó is creamy and slightly thick.
  • Remove from the heat and serve the shrimp bobó hot, decorated with chopped parsley on top.
