Ingredients
500g peeled and cleaned shrimp
2 tablespoons of palm oil
2 tablespoons of olive oil
1 chopped onion
2 minced garlic cloves
1 chopped red pepper
1 chopped yellow pepper
2 chopped tomatoes
1 small glass of coconut milk (200ml)
200ml shrimp broth (can be replaced with vegetable broth)
2 tablespoons of tomato puree
1 tablespoon chopped coriander
1 lemon juice
Salt and pepper to taste
500g of cooked and mashed cassava/cassava
Chopped parsley to decorate
Directions
- In a large pan, heat the palm oil and olive oil.
- Add chopped onion and garlic and sauté until soft and lightly browned.
- Add the peppers and saute for a few more minutes, until they are slightly soft.
- Add the chopped tomatoes and sauté until they start to break down.
- Place the shrimp in the pan and cook for about 5 minutes, until they are pink and cooked through.
Season with salt, pepper and lemon juice. - Then add the shrimp broth, coconut milk, tomato paste and chopped cilantro.
Mix well. - Bring the mixture to a boil and reduce the heat.
Cook for about 10 minutes, stirring occasionally to enhance the flavors. - Add the cooked and mashed cassava/cassava to the pan.
Stir well to incorporate the ingredients. - Cook for a few more minutes, until the bobó is creamy and slightly thick.
- Remove from the heat and serve the shrimp bobó hot, decorated with chopped parsley on top.
