Ingredients

  • 500g beef tripe, cleaned and cut into strips

  • 500g of beef mocotó cut into pieces

  • 200g smoked pepperoni sausage, cut into slices

  • 1 large chopped onion

  • 3 minced garlic cloves

  • 2 chopped tomatoes

  • 2 bay leaves

  • 1 chopped green pepper

  • 1 bunch of green chives (parsley and chives) chopped

  • 1 lemon juice

  • Salt and pepper to taste

  • Oil or olive oil for sautéing

Directions

  • In a pressure cooker, put the ox tripe and the mocotó. 
    Cover with water and lead to high heat to cook for about 30 minutes after starting the pressure. 
    Turn off the heat and wait for all the pressure to come out before opening the pan. 
    Drain the cooking water and reserve the cooked ingredients.
  • In another pan, heat a little oil or olive oil and sauté the onion and garlic until golden.
  • Add the pepperoni sausage and let it fry for a few minutes until it is lightly golden.
  • Add the cooked beef tripe and mocotó to the pan and mix well.
  • Add the chopped tomatoes, green bell pepper, bay leaves and season with salt and pepper to taste.
  • Cover with enough hot water to cover all ingredients and simmer over low heat for about 1 hour, or until ingredients are tender and broth has reduced and thickened.
  • Before serving, squeeze the lemon juice over the tripe and sprinkle the chopped parsley on top.
  • The tripe is traditionally served with white rice and a good pepper sauce.
