These scones are easy to make and can be enjoyed warm with a pat of butter or alongside a bowl of soup.

Ingredients

  • 2 cups (250g) all-purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper (optional, for a hint of spice)

  • 1/4 teaspoon mustard powder (optional, enhances cheesiness)

  • 1/2 cup (115g) cold unsalted butter, cubed

  • 1 cup (120g) grated sharp cheddar cheese (plus extra for topping)

  • 1/4 cup (25g) grated Parmesan cheese (optional, for extra flavor)

  • 1/2 cup (120ml) milk (plus extra for brushing)

  • 1 large egg

Directions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, salt, black pepper, and mustard powder (if using).
  • Add the cold, cubed butter to the dry ingredients. Use your fingertips or a pastry cutter to rub the butter into the flour until the mixture resembles coarse breadcrumbs.
  • Stir in the grated cheddar and Parmesan cheese until evenly distributed.
  • In a small bowl, whisk together the milk and egg. Pour this mixture into the dry ingredients and stir until just combined. Be careful not to overmix.
  • Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a circle about 1 inch (2.5 cm) thick. Cut into 8 wedges or use a round cutter to shape individual scones.
  • Place the scones on the prepared baking sheet. Brush the tops with a little milk and sprinkle with extra grated cheese.
  • Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown and cooked through.
  • Allow the scones to cool slightly before serving. Enjoy warm with butter or your favorite spread.
