Ingredients
1kg of Aipim
1 kg shelled and headless shrimp
1 medium onion chopped
1 large chopped tomato
2 chopped chili peppers
palm oil (to taste)
1 bottle of coconut milk (200ml)
coriander (to taste)
2 garlic cloves
1/3 teaspoon grated ginger
½ lemon
1 teaspoon of salt for cooking the cassava
2 teaspoons salt for seasoning the shrimp (I said 1 teaspoon, use 2)
Adjust the salt at the end
Total water used (1 liter)
Directions
- In a blender, add 1kg of cooked Aipim without the lint;
- Add 200ml of the cassava cooking water;
- Whisk until well blended;
- Reserve;
- In a pan, add 1 medium chopped onion;
- Add 2 tablespoons of palm oil;
- Cook over medium heat for approximately 3 minutes;
- Add 1 large chopped tomato;
- Add 2 chopped chili peppers;
- Add ginger to taste (1/4 teaspoon);
- Mix;
- Add 1 bottle of coconut milk (200ml);
- Add 1 kg of shelled and headless shrimp;
- Mix and cook for 4 minutes;
- Add the beaten cassava in the blender;
- Add cilantro (to taste);
- Add salt to taste;
- Mix until it starts to boil and turn off the heat;
- Your shrimp bobó is ready!
