2 cups cooked and shredded chicken (grilled or rotisserie)
1 teaspoon olive oil
1 teaspoon taco seasoning (optional)
4 large flour tortillas
2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
½ cup diced bell peppers (optional)
½ cup diced onions (optional)
¼ cup chopped fresh cilantro (optional)
1 tablespoon butter (for frying)
Directions
- Heat olive oil in a pan over medium heat.
- Add the shredded chicken and taco seasoning (if using). Stir well and cook for 2-3 minutes until warm.
- Place a tortilla on a flat surface.
- Spread a layer of shredded cheese over half of the tortilla.
- Add the cooked chicken, bell peppers, onions, and cilantro on top of the cheese.
- Sprinkle more cheese over the filling, then fold the tortilla in half.
- Heat a large skillet over medium heat and melt a little butter.
- Place the folded quesadilla in the skillet and cook for 2-3 minutes on each side, until golden brown and crispy.
- Repeat with the remaining tortillas.
- Cut the quesadillas into triangles and serve with sour cream, salsa, or guacamole.
