Vatapd

Vatapá is a traditional dish of Brazilian cuisine, especially popular in the northeast region of the country. It is made with dried shrimp, peanuts, palm oil and other delicious ingredients.

Here is a basic and easy recipe to prepare your vatapá:

Ingredients

  • 500g dried shrimp (without shell and head)

  • 500ml of coconut milk

  • 200g roasted and skinless peanuts

  • 2 medium chopped onions

  • 2 minced garlic cloves

  • 2 chopped ripe tomatoes

  • 1 chopped green pepper

  • 1 chopped red pepper

  • 1 bunch of green smell (parsley and cilantro) chopped

  • 100ml palm oil

  • 100g of crustless bread (or cassava flour)

  • 2 tablespoons of olive oil

  • salt to taste

  • Black pepper to taste

  • Water (necessary amount)

Directions

  • Start by washing the dried shrimp well under running water to remove excess salt. 
    Then let them soak in water for about 1 hour.
  • In a large pan, heat the olive oil and sauté the onion and garlic until golden.
  • Add the previously hydrated and drained prawns, sautéing them until they are cooked.
  • Add the chopped tomatoes, peppers and parsley, stirring well to incorporate the flavors.
  • In a blender, place the coconut milk, the roasted and skinless peanuts, and beat until obtaining a homogeneous mixture.
  • Pour the blender mixture into the pan with the other ingredients, stirring constantly to prevent it from sticking to the bottom.
  • Then add the palm oil, salt and black pepper to taste. 
    Taste and adjust seasoning if necessary.
  • Allow to cook over low heat for about 15 to 20 minutes, stirring occasionally to prevent burning.
  • If the vatapá is too liquid, add sliced ​​bread (or cassava flour) to thicken the consistency. 
    Stir well until incorporated.
  • Continue cooking for a few more minutes until you reach the desired texture, which should be creamy and consistent.
