
Vatapá is a traditional dish of Brazilian cuisine, especially popular in the northeast region of the country. It is made with dried shrimp, peanuts, palm oil and other delicious ingredients.

Ingredients
500g dried shrimp (without shell and head)
500ml of coconut milk
200g roasted and skinless peanuts
2 medium chopped onions
2 minced garlic cloves
2 chopped ripe tomatoes
1 chopped green pepper
1 chopped red pepper
1 bunch of green smell (parsley and cilantro) chopped
100ml palm oil
100g of crustless bread (or cassava flour)
2 tablespoons of olive oil
salt to taste
Black pepper to taste
Water (necessary amount)
Directions
- Start by washing the dried shrimp well under running water to remove excess salt.
Then let them soak in water for about 1 hour. - In a large pan, heat the olive oil and sauté the onion and garlic until golden.
- Add the previously hydrated and drained prawns, sautéing them until they are cooked.
- Add the chopped tomatoes, peppers and parsley, stirring well to incorporate the flavors.
- In a blender, place the coconut milk, the roasted and skinless peanuts, and beat until obtaining a homogeneous mixture.
- Pour the blender mixture into the pan with the other ingredients, stirring constantly to prevent it from sticking to the bottom.
- Then add the palm oil, salt and black pepper to taste.
Taste and adjust seasoning if necessary. - Allow to cook over low heat for about 15 to 20 minutes, stirring occasionally to prevent burning.
- If the vatapá is too liquid, add sliced bread (or cassava flour) to thicken the consistency.
Stir well until incorporated. - Continue cooking for a few more minutes until you reach the desired texture, which should be creamy and consistent.
