Ingredients

  • 2 cups cooked and shredded chicken (grilled or rotisserie)

  • 1 teaspoon olive oil

  • 1 teaspoon taco seasoning (optional)

  • 4 large flour tortillas

  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

  • ½ cup diced bell peppers (optional)

  • ½ cup diced onions (optional)

  • ¼ cup chopped fresh cilantro (optional)

  • 1 tablespoon butter (for frying)

Directions

  • Heat olive oil in a pan over medium heat.
  • Add the shredded chicken and taco seasoning (if using). Stir well and cook for 2-3 minutes until warm.
  • Place a tortilla on a flat surface.
  • Spread a layer of shredded cheese over half of the tortilla.
  • Add the cooked chicken, bell peppers, onions, and cilantro on top of the cheese.
  • Sprinkle more cheese over the filling, then fold the tortilla in half.
  • Heat a large skillet over medium heat and melt a little butter.
  • Place the folded quesadilla in the skillet and cook for 2-3 minutes on each side, until golden brown and crispy.
  • Repeat with the remaining tortillas.
  • Cut the quesadillas into triangles and serve with sour cream, salsa, or guacamole.
