Ingredients
100 grams of chili jam
100 grams of chopped bacon
2 teaspoons of balsamic vinegar
20 ml of cognac
1 chopped onion
A pinch of salt
Directions
- Fry the chopped bacon in a large pan, stirring occasionally, until it reduces slightly and the fat renders.
- Add the chopped onion and the cognac, and cook over low heat, stirring well until the fat loosens from the bottom of the pan.

- Add the balsamic vinegar and stir for another 5 minutes over low heat. Add the salt and mix well.
- Add the chili jam and continue stirring for another 5 minutes over low heat, until the liquid reduces.

- Turn off the heat, let the jam cool, and transfer it to a sterilized glass jar with a lid.
- Store the bacon jam in the refrigerator and enjoy it with meats, sandwiches, cheeses, salads, breads, toast, crackers, and more.
