Ingredients
500 g lychees with skin (about 310 g of pulp)
1/2 cup filtered water (120 ml)
100 ml apple pectin
50 ml vinegar
160 g sugar
Directions
- Peel the lychees, chop the pulp, and discard the pits. Blend the pulp with half of the water using an immersion blender or a regular blender.
- Strain the mixture through a fine-mesh sieve into a bowl, pressing with a spoon, then transfer the liquid to a saucepan.

- Add the sugar and vinegar, and cook over low heat until the mixture begins to boil, stirring occasionally.
- Once it reaches a boil, continue cooking for 10 minutes. Add the pectin and cook for another 10 minutes.

- Remove the jam from the heat, let it cool to room temperature or in the refrigerator, and transfer it to a glass jar with a lid.
- Enjoy the lychee jam with bread, toast, or crackers, and keep it refrigerated before and after serving.
